Hummus of the Week: Sun Dried Tomato

My Hummus is a little late this week, but here it is! The taste of Italy is at your fingertips with a simple pulse of your food processor:

Sun-Dried Tomato Hummus:
1 can chick peas
2 gloves garlic, diced
2 TBSP tahini
the juice of 1/2 a lemon
6 TBSP olive oil
1/2 cup sun dried tomatoes, diced
2-3 fresh basil leaves, chopped
Salt and pepper to taste

You know what to do! Dump it all in the food processor and pulse until it's a dip! The actual amounts might need to be modified slightly... I really need to start paying attention more to what I'm doing in the kitchen if I'm going to post recipes online.... maybe next time.

Enjoy!

do you chop your garlic in the food processor? i always throw the whole garlic cloves in first and pulse til minced. saves some chop time!

this was delicous - i got to taste it firsthand while pizza making the other day!

You know, I've never even thought about doing that, but what a great idea! I'll definitely be doing that from now on!
