Pizza Party!

What is better than a laid back Saturday of pizza and a movie? Homemade pizza and a movie! The Fallible Foodies, plus one husband, plus one roomie/bestie gathered to create some delicious pizza, throw back a few drinks, and enjoy one another's company. Cooking with friends can be such a blast - just choose recipes that aren't too difficult, and don't forget your beverage of choice! Recipes are posted at the bottom.

Homemade pizza sauce = three ingredients: Saute 3 cloves of minced garlic in olive oil over medium low heat until fragrant. Add a 28 oz can of crushed tomatoes, simmer for 15-20 minutes.

Our toppings of choice: sausage, green peppers, caramelized onions, fresh mozzarella and some freshly grated parmesan

Bake for 8 to 13 minutes in a 500 degree oven until cheese is bubbly and brown and crust is just beginning to brown

Saturday night dinner and a beverage

Basic Pizza Dough
from ATK (makes enough for 3 12 inch pizzas)

4 1/4 cups bread flour, plus extra for the counter
1 envelope (or 2 1/4 teaspoons) instant or rapid-rise yeast
1 1/2 teaspoons salt
2 tablespoons olive oil
1 1/2 cups water, warm

1. Pulse 4 cups of the flour, yeast, and salt in a food processor (fitted with a dough blade if possible) to combine. With the processer running, pour the oil, then the water through the feed tube and process until a rough ball forms, 30 to 40 seconds. Let the dough rest for 2 minutes, then process for 30 seconds longer.

2. Turn the dough out onto a lightly floured counter and knead by hand to form a smooth, round ball, about 5 minutes, adding the remaining 1/4 cup flour as needed to prevent the dough from sticking to the counter. Transfer to a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled in size, 1 to 1 1/2 hours.

1 recipe Basic Pizza Dough
flour for the counter
1 recipe Quick Pizza Sauce (see above picture caption for recipe - it's the easiest thing ever)
12 oz fresh mozzarella, cut into small pieces
grated Parmesan (as much as you like)
your toppings of choice! (we used 1 lb sausage, casings removed and browned, fresh basil, sliced green pepper, and caramelized onion - simply slice an onion thinly, then saute in olive oil over medium low heat for about 30 minutes of until golden brown)

Directions:

1. Adjust an oven rack to the lower-middle position and preheat to 500 degrees.

2. Meanwhile, turn the dough out onto a lightly floured counter, cut into 3 even pieces, and cover with plastic wrap. Working with one piece of dough at a time, shape into a smooth, round ball, cover again with plastic wrap, and let rest 20 to 30 minutes. *We somewhat omitted this resting step and it still turned out fine*

3. Uncover one ball of dough and stretch and shape the dough into a 12 inch round (or a square if you so please). Place dough on baking sheet. Spread on your pizza sauce (see above photo caption for recipe), leaving a 1/2 inch edge of dough uncovered. Spread on your toppings, leaving the cheese for last (I highly recommend the mozzarella/parmesan combo).

4. Bake for 8 to 13 minutes in the 500 degree oven, until the cheese is golden in spots and the crust edges are browned.
